With a big family we buy a lot of things in bulk. Toilet paper, anyone? With four girls, shampoo and conditioner is a big thing too. I like to do as little shopping as possible though, so I am the prime target for all those jumbo-sized products in the stores…lol! But, honestly, I really do prefer to buy things in bulk so that I don’t have to make a million trips to the store each week. Who has time for that? I also prefer cooking in bulk, so the 4-pound bag of NatureRaised Farms® boneless skinless chicken breast portions in the freezer section at Sam’s Club is a perfect option for me. I love making a big batch of crockpot chicken and then using it for things like Pineapple-Apple Chicken Salad.
Ingredients needed for Pineapple-Apple Chicken Salad:
4-pound bag of NatureRaised Farms Frozen Chicken Breast
2 tsp. Garlic powder
2 Tbsp. Italian seasoning
1 Small apple (tart preferably)
1 cup Pineapple, finely chopped (fresh or canned & drained)
2 Tbsp. Plain yogurt
2 Tbsp. Non-GMO Mayonnaise
1/4 cup Sweet Pickle Relish (the brand I use doesn’t have HFCS)
Salt & Pepper to taste
Lettuce and/or bread for serving
In addition to buying things in bulk, I also think a lot about the kinds of foods that I feed my family. While we are not a 100% organic, healthy eating family, I do like to choose things that are free of extra chemicals and GMOs as often as possible. I don’t want to buy in bulk and sacrifice my family’s health for the convenience. So I can feel safe with NatureRaised Farms chicken.
First, you need to prepare the chicken. Since we’ve already addressed the fact that I’m a total minimalist when it comes to shopping & cooking, it will come as no surprise that I just dump the entire 4-pound bag of chicken breast into the slow cooker, sprinkle the garlic powder and Italian seasoning on the top and then leave it to cook on low for 8-10 hours.
After the chicken is done cooking, I transfer it all to a bowl and shred it all with two forks. In general my rule is that if it doesn’t fall apart when I touch it with a fork, it’s not ready.
Once it is shredded, I separate the chicken in 2-cup portions into freezer zip top bags. I saved out 2 cups for the chicken salad and put the rest of the bags in the freezer. (It gave me 3 bags for the freezer and the portion for the chicken salad).
Chop up the 1 cup of pineapple and the small apple and add them to the shredded chicken in the bowl.
Add the plain yogurt, mayonnaise and sweet pickle relish and give it all a good stir.
Add salt & pepper to taste.
We prefer to eat chicken salad over lettuce, but you can also make a sandwich or wrap with it for a tasty variation.
