One of my favorite parts of any holiday is surprising the kids with a special breakfast. My kids thought I had lost my mind when I served this fun (yet healthy) Lucky Charms Parfait for breakfast.
This Lucky Charms Parfait is perfect for St. Patrick’s Day and is actually quite healthy – using a few marshmallows for garnish and relying on protein-rich Greek yogurt for the bulk of the meal.
While I dyed my Greek yogurt green with a little bit of food coloring, you can definitely skip that step because the marshmallows are the hero of the dish. (Although, the marshmallows aren’t exactly dye-free…)
You could also add in a layer of fruit, or substitute out your child’s favorite breakfast cereal for the Lucky Charms.
How to Make a Lucky Charms Parfait
Ingredients for Lucky Charms Parfait:
- 1 cup of Lucky Charms cereal for each serving
- 1 1/2 cups Greek yogurt for each serving
- 4 drops green food dye, optional
- 1 teaspoon mint or vanilla extract, optional
Pour the Lucky Charms cereal into a large bowl and remove the marshmallows – these will be used as garnish later.
Fill the serving dishes with 1 cup of Lucky Charms cereal each – or, you can layer the Lucky Charms cereal with the yogurt in alternating layers.
Wipe out the bowl you used to separate the Lucky Charms and then add your greek yogurt. Give it a good stir to remove any lumps before adding the optional food dyes and extracts. Mix in and adjust to taste or color preferences.
Carefully spoon the yogurt over top of the cereal and then sprinkle on the reserved marshmallows.
