Nothing conveys kitchen nostalgia and home comfort quite like banana bread. It’s a classic that every mom should have a great recipe for, and so today I’m here to share with you a fool-proof mini Banana Bread recipe that your whole family will love.
While I love my sugar-free banana bread recipe, some people just want that old fashion “just like mom used to make” so I went back to basics with this recipe. It’s also a lot less expensive to make than my sugar-free version which requires flax meal and honey.
Homemade banana bread is the perfect way to use up overripe bananas and make your house smell divine. Seriously, fresh made banana bread must be one of the top ten scents in the world.
You can use the over ripe bananas right away with this simple recipe – you don’t even need to break out the mixer for it, making it perfect for a quiet nap time activity. Or, you can peel and chop up the bananas and store them in a freezer bag for later baking. (They’re also great for thickening up smoothies or making sugar-free ice cream with.)
How to Make Homemade Mini Banana Bread
First, preheat your oven to 350F. Line a mini loaf pan with parchment paper squares. (I at first though the parchment squares were silly – I can cut my own squares – but I have been surprised at how often I use them.)
Next, assemble your ingredients:
- 2 cups all-purpose flour
- 1/4 cup granulated sugar
- 2 tsp baking powder
- 1 tsp baking soda
- Pinch salt
- 3 mashed ripe bananas
- 1/2 cup butter, melted
- 1/4 cup milk
- 2 eggs
In large bowl, whisk flour, sugar, baking powder, baking soda and salt together. Make a well in the center and set aside.
In a separate bowl, whisk together the mashed bananas, melted butter, milk and eggs.
Pour the banana mixture into the flour mixture and stir just until blended, being careful not to over mix.
Portion out the batter into the lined mini loaf tray. I used a 1 cup measuring cup and that was perfect for my loaf sizes.
Bake the for 25-30 minutes until an inserted toothpick is removed cleanly. Cool on a baking rack.
While the banana bread is cooling, prepare the optional glaze by mixing:
- 1 cup icing sugar
- 2-3 Tablespoons milk
Drizzle the glaze overtop of the bread and let set.
