5 Ways Your Instant Pot will Save Your Weeknight Dinners

Drive the kids, pick up the kids, wait for the kids… three simple phrases that seem to monopolize my weekdays. While family dinner is a must at our house, I can’t depend on being home for 30 minutes beforehand to create a fabulous meal for my wonderful, ravenous family. A few months ago I was introduced to the Instant Pot and I’m pretty sure that I owe my friends a few million ‘thank yous’ for all the ways that precious appliance has saved my weeknight dinners since then. I am going to share some ways that your Instant Pot can save your weeknight dinners…feel free to e-mail me your ‘thank yous’. What is an Instant Pot?

Oh my! If you have never heard of an Instant Pot, prepare to be blown away. This awesome appliance can replace multiple items that you may have hanging around your kitchen.

Make yogurt, perfectly prepped rice (even brown rice!), soup in less than 30 minutes, and take a whole frozen chicken from freezer to falling off the bone in 90 minutes.

5 Ways to Save Your Weeknight Dinner

Now, you may not be aware, but I am not actually a full-time food blogger. If all the kids’ activities you see on the screen aren’t enough of a clue, I’m not sure what would be…

Seriously though, as much as I love creating hands-on learning activities for the under 10 crowd, I am also a mother of 4 very busy girls, including a very high needs daughter who has Rett Syndrome. I average 4 really rough hours of sleep each night and I live off of coffee because I’m usually exhausted.

So I know exactly what it means to not have enough time to create a gourmet meal on a Tuesday night. Or any night for that matter.

At least that’s the way that I felt until my first Instant Pot arrived on my doorstep.

Then, I hit Pinterest to find some easy ways to not starve my family.

I started with cooking ground beef from frozen to finished in less than 30 minutes (remember there is no need to hover over the stove, so 30 minutes of ‘cooking’ actually means 2 minutes of throwing something in the pot and turning it on.) After it was finished cooking, I stirred in some taco seasoning for some easy, weeknight tacos. For my family, we need to use at least 2 pounds of ground beef and I was able to fit up to 3 pounds in the 6 qt. Instant Pot (4-5 in the 8 qt.).

The ground beef trick is perfect for making spaghetti sauce.

Then, I tried my favorite pasta dish, Fettuccini Alfredo with Chicken. That is when I was officially amazed.

Last week, I put a whole, frozen chicken in the pot for 90 minutes in the morning and let it stay on warm the rest of the day while I went about life. Then, when I had a few minutes in the afternoon, I added 2 qts. of chicken broth, carrots, celery, onions and seasonings (parsley, salt and pepper), closed the lid and pressed the soup button. We had the most amazing chicken soup 30 minutes later. I don’t have a recipe for that since I didn’t use one, but just choose your favorite chicken soup recipe and try out that simple ‘soup’ button!

This week, I used the soup button again to make some red beans and rice. I normally make it in the slow cooker, but I have a hard time planning to make it in the morning so that it can cook all day. This week, I put it in the Instant Pot at 2pm, pushed the soup button and enjoyed it at supper time. (We could have eaten it right away, but the Instant Pot keeps meals safely warm for up to 10 hours.)

I actually have 2 Instant Pots now. The 6 qt. and the 8qt. because we have a big family and often have guests for our meals. It is worth noting that you cannot fill the Instant Pot all the way when using the pressure cooking settings, so you may need a larger one than you would normally use for a slow cooker.
